THE GREAT CHEFS' OF WAPOGASSET BEAR TRAP

2 cups freshly squeezed orange juice
1 cup fresh lemon juice
3 large cloves garlic, minced and DIVIDED
pinch of salt
1/2 tsp. dried crushed red pepper
2 lbs. cooked, deveined, peeled shrimp, cut into
1/2 in. pieces
2 cups chopped red pepper
1/2 cup chopped celery
1/2 cup chopped fresh cilantro
1/4 cup olive oil
Additional olive oil (optional)
Lemon wedges
Serve with tortilla chips/cups or pita chips
Combine orange juice, lemon juice and 2
minced garlic cloves in medium sauce pan over
medium high heat. Add pinch of salt, boil until
mixture is reduced to 1 cup - about 15 minutes.
Cool. Mix in crushed red pepper.
Mix shrimp, bell pepper, celery, red onion,
cilantro and 1/4 cup olive oil in bowl. Toss with
orange juice mixture and remaining garlic clove.
Season with salt and pepper. Cover and chill
until cold, about 2 hours. Can be made 8 hours
to 1 day ahead. Keep refrigerated. Arrange
excabeche in shallow bowl. Garnish with lemon
wedges, thinly sliced. Serve with cupped tortilla
chips or pita chips.
This makes a huge amount. I usually do half a
recipe - that is even quite a bit.
Leaf Lettuce
Red Onion, sliced thin
Dried Cherries
Blue Cheese, crumbles
1 c. oil
1/3 c. lime juice
1 lime - thinly sliced
3 Tbsp. sugar
1 tsp. salt
1/8 tsp. white pepper
1/8 tsp. cayenne pepper
1/4 tsp. celery salt
... this is enough dressing for about 3 heads of
lettuce.
I used 1 head of romaine, 1/4 small red onion, 1/3
c. walnuts, 1/3 c. dried cherries, 1/4 c. blue
cheese to about 1/3 of the dressing. It took 1-1/2
limes to make 1/3 c. juice (roll the limes before
cutting - then squeeze.).
2 tsp. vanilla
4 eggs
4 c. flour
1 tsp. salt
2 tsp. baking soda
2 tsp. baking powder
5 c. oatmeal (ground very fine)
3 c. nuts, chopped
4 c. chocolate chips
... Measure oatmeal and blend in a blender to a fine
powder. Cream butter and both sugars. Add eggs
and vanilla, mix together with flour, oatmeal, salt,
powder and soda. Add chips, nuts. Bake at 375 for
6-8 min. Makes 72 large cookies or 112 medium
cookies.
